Burger Dinner
Thinking about what to eat on a weeknight shouldn’t be a challenge. But let’s face it - life can get too busy and the last thing you need is to fuss over dinner.
You’re not alone! This is the reality for most of us - including me. And with that, I’ve decided to start a mini series of quick, fuss-free (but satisfying) dinner recipes.
Introducing … Chop-Chop Dinners! A collection of my go-to meals that I make when I’m short on time, that would hopefully help take the stress out of your weeknight dinners.
I thought it would only be fitting for my OG Chop-Chop Dinner to be my first official recipe for this series. I make a variation of this every. week.
My formula for this dish is simple but solid: protein, vegetables, and a complex carb. I try to change up the ingredients every week but I always stick to that foundation!
I use whatever I have available as my ‘sides’, and I typically whip them up into a fresh salad. I like texture and colour in my salads, so I added almonds and peppers to this variation.
I also had some leftover beans, so I threw them in as another side dish. They’re a good source of fibre which is good for your heart and gut health ☝️
The goal is to keep these chop-chop (as in under 20 minutes), so I like to keep the steps simple. You can tear the herbs instead of chopping, and if your air fryer is large enough, you can also roast the baby peppers whole to save you the dicing.
Just little ways to save yourself some time with your busy schedules.

THE RECIPE
SERVES 2
Ingredients
Beef:
2x 150g beef patties (unseasoned*)
Salt, pepper, garlic powder
Beans:
½ can of mixed beans (~120g), drained (ideally no salt added)
A handful of fresh herbs, roughly torn
For the dressing: 1 tsp Dijon mustard, 1 tbsp lemon juice, 1 tbsp EVOO
Salad:
A handful of mixed salad leaves
2-3 baby peppers, diced
A handful of roasted almonds
For the dressing: 1 tsp Dijon mustard, 1 tbsp balsamic vinegar, 1 tbsp EVOO
Directions
Season the patties. *Some burger patties already come seasoned, and in this case just cook them as they are.
This might not work for all air fryers, but line the bottom basket with some baking paper. There will be quite a bit of grease that comes out from the burger patties, so having the baking paper to catch it makes cleaning up a lot easier and quicker!
Cook in an air fryer for 11 minutes at 180ºC.
While that cooks, prepare the beans and salad.
For the beans, mix together the dressing and pour it over the beans and herbs.
For the salad, mix together the dressing and pour it over the salad ingredients.
