Simple & Refreshing Coleslaw

I love coleslaw, but I have conditions.

I’m picky like that.

I like my coleslaw light, crunchy, and not drenched in mayonnaise. This is my go-to recipe with a simple dressing that gives enough flavour, while maintaining a refreshing finish.

This was served as part of a Latino-themed dinner party I hosted in my home, where I created a couple of dishes as part of a Taco Bar.

It can however be served as a side dish, or a salad base to accompany your favourite protein!

THE RECIPE

SERVES 6-8

Ingredients

  • 350-400g (about ½ a head) of purple cabbage, shredded

  • 2 medium carrots, shredded

Dressing

  • 3 tbsp white wine vinegar

  • ½ tbsp dijon mustard

  • ½ tbsp Kewpie mayo

  • 2 tbsp extra virgin olive oil

  • Salt and pepper

  • ½ tsp celery seeds (optional)

Directions

  1. In a large salad bowl, mix together the ingredients for the dressing.

  2. Add in the cabbage and carrots, and toss it all together.
