Date & Nut Energy Balls
These date and nut energy balls have become my new favourite snack for an afternoon pick-me-up!
You only need 6 simple ingredients and they’re soo easy to make.
If you’re living in Singapore, you can get the dates at The Source Bulk Foods or Mustafa! I like the former as you can buy just the amount you need (I’m a fan of the Medjool dates there!)
Try out different variations with pumpkin seeds, cranberries, dried apricots, dried figs, ginger powder, etc. and let me know how you go!
THE RECIPE
SERVES 2-4 (MAKES 11 BALLS)
Ingredients
5 large Medjool dates, pitted
1 tbsp (12g) almond meal
1 tbsp (6g) cocoa powder
1 tbsp (6g) coconut flakes
1 tbsp (44g) nut butter
Pinch of salt
Directions
In a processor, blend all ingredients together until smooth. If it’s not coming together, add 1 tbsp water, or as needed.
Dampen hands and shape them into balls. You can use a mini ice cream scoop to help with portioning.
Chill in the fridge, or store in the freezer for a longer shelf life.
Notes
If you can’t take nuts or don’t have any almond flour at home, you may use oat flour. Grind up rolled oats in a food processor till it’s finely ground.
