Festive Okonomiyaki

This is a super easy leftover meal using leftover Brussels sprouts and ham!

If you think about it, okonomiyaki with Brussels sprouts totally works because okonomikayi is typically made with shredded cabbage. And Brussels sprouts are pretty much baby cabbages....right? πŸ˜‰

THE RECIPE

SERVES 4

Ingredients

  • 1 cup all-purpose flour

  • β…› cup corn flour

  • ΒΌ tsp baking powder

  • 1 cup dashi

  • 2 eggs

  • ~180g leftover brussels sprouts, chopped

  • ~4 slices of leftover ham

Toppings

  • Kewpie mayonnaise

  • Thinned teriyaki sauce

  • Togarashi

  • Furikake

  • Spring onion

Directions

  1. Mix all ingredients in a bowl.

  2. Add the batter into an oiled pan over medium heat.

  3. Cook on one side for 10-15 minutes or until it no longer sticks to the bottom of the pan

  4. Flip and cook for another 5 minutes or so until done.

  5. Spread teriyaki sauce onto the top of the okonomiyaki and drizzle the mayonnaise. Use a toothpick to create a pattern if so desired. Top with togarashi, furikake and spring onion.
